Okra with Tomatoes
Ingredients
- ¼ cup peanut or canola oil
- 1 lb fresh okra, tops removed and tails removed, cut crosswise into ¼ in thick rounds
- 3 medium tomatoes
- 2 medium garlic cloves, peeled and mashed to a pulp
- 2 Tbsp. fresh lime juice
- ½ tsp. coriander
- ½ tsp. cumin
- 1/8 tsp. turmeric
- 1/8-1/4 tsp. cayenne
- ¾ tsp. salt, or to taste
- Freshly ground black pepper to taste
Instructions
- Pour the oil in a large frying pan over medium-high heat.
- When hot, put in cut okra. Stir and fry for 7-10 minutes.
- When the okra starts to brown, turn the heat down to medium and cook, stirring, another 3-4 minutes. The okra will have browned a bit more. Turn the heat down to low and cook 2-3 minutes or until okra is almost tender. Now put in all remaining ingredients.
- Stir gently on low heat for 4-5 minutes or until all flavors have melded and the tomatoes have dried a little.
- Salt and pepper to taste.
