Shrimp Okra Gumbo

Shrimp Okra Gumbo

Ingredients

  • 3 Tbsp. oil
  • 3 cups okra, sliced in rounds
  • 2 Tbsp. flour (for roux)
  • 2 Tbsp. oil (for roux)
  • 1 small bell pepper, chopped
  • 2 onions, chopped
  • ½ can tomato sauce
  • 2 qt. hot water
  • Salt and pepper to taste
  • 2 Tbsp. parsley, chopped
  • 3 green onions, chopped
  • 3 ribs celery, chopped
  • 2 lbs. shrimp
  • Tabasco sauce to taste

Instructions

  1. In skillet, stir-fry okra in 3 Tbsp. oil until almost cooked.
  2. Add tomato sauce to okra and simmer on low while you make the roux.
  3. For the roux, combine 2 Tbsp. oil and flour in a large soup pot.
  4. Add onions, celery, and bell pepper and cook until soft. Add shrimp and fry in roux mixture for a few minutes. Add hot water and okra mixture and bring to a boil.
  5. Lower heat to medium and simmer for 45 minutes.
  6. Add green onions, parsley, and Tabasco sauce 20 minutes before serving. Salt and pepper to taste. Serve in soup bowls over cooked rice.
