Sugar Peas with Mint


  • ½ lb sugar peas, *trimmed
  • 2 tsp. olive oil
  • 3 green onions, chopped
  • 1 clove garlic, chopped
  • Salt and freshly ground pepper to taste
  • 1 Tbsp. chopped fresh mint


  1. Heat oil in a large skillet over medium heat.
  2. Add the sugar peas, green onion, and garlic.
  3. Season with salt and pepper.
  4. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.
