Creamed Spinach with Coconut Milk

Serving Size: Serves 4

Ingredients

  • 1 Tbsp. olive oil
  • ½ cup sweet onions, diced
  • ½ Tbsp. garlic, minced
  • 1 bag spinach leaves (8oz)
  • ¼ cup coconut milk
  • 1/8 tsp. white pepper
  • ¼ tsp. salt to taste

Instructions

  1. Heat olive oil in a large sauté pan over medium heat, and then add onions. Sauté until onions become translucent (about 3 min), then add garlic and sauté another 1 min.
  2. Add spinach and sauté until it begins to wilt, and then add coconut milk and seasonings. Mix well.
  3. Sauté spinach until completely wilted, then transfer to a warm dish and garnish with fresh coconut.
