Arugula and Sugar Snap Pea Salad with Basil and Mint Dressing

Ingredients

  • ¾ CSA Bag Arugula- you can swap in spinach leaves or the Salanova lettuce in place of half of the arugula for a more mild salad
  • 1 CSA bag sugar snap peas, trimmed, steamed for 3-4 minutes if desired, delicious if left raw
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon minced shallot
  • 2 tablespoons minced basil leaves
  • 1 tablespoon minced mint leaves

Instructions

  1. Whisk olive oil, lemon juice, shallot, basil and mint together in a small bowl.
  2. Season with salt and pepper.
  3. Combine sugar snaps (cool first if steamed) with arugula in a large bowl.
  4. Add dressing, and toss to mix.
  5. Season with salt and pepper.
