Crunchy Radish, Squash, and Tomato Salad
Ingredients
- 1 bag tomatoes (1lb), chopped
- 1 green onions, finely chopped
- 1 small zephyr squash (1 cup diced)
- 1 bunch red radishes, quartered
- Dressing
- 3 Tbsp. vegetable oil
- 2 heaped tsp Dijon mustard
- Juice of 2 limes
- 2 tsp. sugar
- 1 serano pepper, deseeded and finely chopped handful mint leaves, shredded
Instructions
- Add the mustard, lime juice, sugar, pepper, and mint to a bowl and gradually whisk in the vegetable oil.
- Add the tomatoes, onions, squash and radish to the dressing, stir to coat.
