Crunchy Radish, Squash, and Tomato Salad

Ingredients

  • 1 bag tomatoes (1lb), chopped
  • 1 green onions, finely chopped
  • 1 small zephyr squash (1 cup diced)
  • 1 bunch red radishes, quartered
  • Dressing
  • 3 Tbsp. vegetable oil
  • 2 heaped tsp Dijon mustard
  • Juice of 2 limes
  • 2 tsp. sugar
  • 1 serano pepper, deseeded and finely chopped handful mint leaves, shredded

Instructions

  1. Add the mustard, lime juice, sugar, pepper, and mint to a bowl and gradually whisk in the vegetable oil.
  2. Add the tomatoes, onions, squash and radish to the dressing, stir to coat.
