Green Beans with Walnuts and Garlic

Ingredients

  • 1 CSA bag green beans, ends trimmed
  • 2 Tbsp. Nut oil if you have it, otherwise olive oil is fine (I used hazelnut oil)
  • Vinegar (I used white balsamic)
  • ¼ cup chopped walnuts
  • 1 garlic clove, chopped
  • Sea salt to taste

Instructions

  1. Bring a pot of water to boil.
  2. Drop in the green beans- 1-2 minutes for the thin beans, 2-3 minutes for the thicker beans (pictured). Drain beans and put in a bowl and set aside.
  3. Heat 1 Tbsp. of oil in a small pan and add the garlic.
  4. Once the garlic is soft, add the walnuts for just a couple of seconds to warm them, and then add mixture to the beans. Season with the oil, vinegar and sea salt.
