Roasted Parsnips and Carrots with Dill

Ingredients

  • 1 lb of parsnips, peeled (discard and do not eat the leaves)½ lb of carrots, unpeeled
  • 1 ½ Tbsp olive oil
  • ½ tsp freshly ground black pepper
  • 1 Tbsp fresh dill

Instructions

  1. Slice the parsnips in carrots on a diagonal in 1 in slices making sure not to make them too small.
  2. Place on a baking sheet, add the olive oil, salt, and pepper and toss well.
  3. Roast for 20 to 40 min depending on the size of the slices, tossing occasionally until the parsnips and carrots are just tender.
  4. Sprinkle with dill and serve hot.
