Shawarma Greens

Ingredients
- 1 tablespoon olive oil
- 1 clove garlic, crushed and chopped
- 4 ounces Malabar spinach leaves and young stalks
- 1 tablespoon lemon juice
- ¼ teaspoon schwarma spices*
- Salt, a pinch
Instructions
- In a pan over medium heat warm the oil, and add the garlic. Sauté until translucent.
- Add the spinach. Raise heat to high and cook for a couple of minutes. Turn, and add the lemon juice and spices.
- Continue to cook until the leaves have collapsed but have not lost their bright color. Serve at once.
Notes
*Shawarma spice blend: 1 tablespoon cumin seeds 1 tablespoon sumac 2 teaspoon black peppercorns 1 teaspoon fennel seeds 1 star anise 5 cloves 5 cardamom pods ½ cinnamon stick ¼ teaspoon fenugreek seeds ½ whole nutmeg, grated ¼ teaspoon paprika Whizz everything in a spice grinder till fine. Bottle at once.
